Mutton Ghee Roast is a classic dish from the Mangalurean Catholic Cuisine, known for its rich and spicy flavors. This dish is a perfect blend of tender mutton pieces roasted in ghee and a special blend of aromatic spices.

Mutton Ghee Roast

Ingredients

  • 500g mutton, cut into pieces
  • 4 tbsp ghee
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 inch ginger, grated
  • 5-6 garlic cloves, minced
  • 1 tsp turmeric powder
  • 2 tbsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the ginger and garlic, and sauté for a few minutes until the raw smell disappears.
  3. Now, add the tomatoes and cook until they turn mushy.
  4. Add the mutton pieces, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the mutton with the spices.
  5. Cover and cook on low heat until the mutton is tender, stirring occasionally.
  6. Once the mutton is cooked and the ghee separates from the masala, garnish with fresh coriander leaves.
  7. Serve hot with steamed rice or roti.
