Mutton Ghee Roast
Mutton Ghee Roast is a classic dish from the Mangalurean Catholic Cuisine, known for its rich and spicy flavors. This dish is a perfect blend of tender mutton pieces roasted in ghee and a special blend of aromatic spices.
Ingredients
- 500g mutton, cut into pieces
- 4 tbsp ghee
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 inch ginger, grated
- 5-6 garlic cloves, minced
- 1 tsp turmeric powder
- 2 tbsp red chili powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger and garlic, and sauté for a few minutes until the raw smell disappears.
- Now, add the tomatoes and cook until they turn mushy.
- Add the mutton pieces, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the mutton with the spices.
- Cover and cook on low heat until the mutton is tender, stirring occasionally.
- Once the mutton is cooked and the ghee separates from the masala, garnish with fresh coriander leaves.
- Serve hot with steamed rice or roti.
