Mutton Varuval (spicy Lamb Curry)

Ingredients
- 1 kg mutton, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup yogurt
- 2 tbsp ginger-garlic paste
- 1/4 cup oil
- 1 tsp turmeric powder
- 2 tbsp chili powder
- 1 tbsp coriander powder
- 1/2 tsp cumin powder
- 1 inch cinnamon stick
- 4 cloves
- 4 cardamom pods
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, chili powder, coriander powder, cumin powder, and salt. Let it sit for 30 minutes.
- Heat oil in a pan and add the cinnamon, cloves, and cardamom. Sauté until fragrant.
- Add the chopped onions and cook until golden brown.
- Pour in the tomato puree and cook until the oil separates.
- Add the marinated mutton and cook on medium heat until the mutton is tender and the gravy thickens.
- Garnish with fresh coriander leaves before serving.
