Mutton Varuval (spicy Lamb Curry)

Ingredients

  • 1 kg mutton, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1/4 cup oil
  • 1 tsp turmeric powder
  • 2 tbsp chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp cumin powder
  • 1 inch cinnamon stick
  • 4 cloves
  • 4 cardamom pods
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, chili powder, coriander powder, cumin powder, and salt. Let it sit for 30 minutes.
  2. Heat oil in a pan and add the cinnamon, cloves, and cardamom. Sauté until fragrant.
  3. Add the chopped onions and cook until golden brown.
  4. Pour in the tomato puree and cook until the oil separates.
  5. Add the marinated mutton and cook on medium heat until the mutton is tender and the gravy thickens.
  6. Garnish with fresh coriander leaves before serving.
