Muya Bai (spicy Chicken Curry)

Ingredients

  • 500g chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • 1/2 cup coconut milk
  • 2 tbsp mustard oil
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and sauté the chopped onions until golden brown.
  2. Add the ginger-garlic paste and green chilies, and cook for a few minutes.
  3. Next, add the chicken pieces and cook until they are browned on all sides.
  4. Stir in the turmeric, red chili, cumin, and coriander powders, and cook for a minute.
  5. Pour in the tomato puree and cook until the oil separates from the masala.
  6. Add the coconut milk and salt, and simmer until the chicken is cooked through and the curry thickens.
  7. Garnish with fresh coriander leaves and serve hot with rice or flatbread.
