Ingredients
- 500g chicken, cut into pieces
- 2 cups pumpkin, diced
- 1 onion, finely chopped
- 3-4 green chilies, slit
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 cup coconut milk
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add the ginger and garlic paste, green chilies, and sauté for a few minutes.
- Add the chicken pieces and cook until they turn golden brown.
- Stir in the turmeric, cumin, coriander, and red chili powders, and cook for a few minutes.
- Add the diced pumpkin and mix well with the chicken and spices.
- Pour in the coconut milk and season with salt. Cover and simmer for 20-25 minutes until the chicken and pumpkin are cooked through.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
