Ingredients

  • 500g chicken, cut into pieces
  • 2 cups pumpkin, diced
  • 1 onion, finely chopped
  • 3-4 green chilies, slit
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 cup coconut milk
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the chopped onions until golden brown.
  2. Add the ginger and garlic paste, green chilies, and sauté for a few minutes.
  3. Add the chicken pieces and cook until they turn golden brown.
  4. Stir in the turmeric, cumin, coriander, and red chili powders, and cook for a few minutes.
  5. Add the diced pumpkin and mix well with the chicken and spices.
  6. Pour in the coconut milk and season with salt. Cover and simmer for 20-25 minutes until the chicken and pumpkin are cooked through.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
