Nacatamalitos (corn Pancake Fiesta)

Ingredients

  • 2 cups cornmeal
  • 1 cup water
  • 1 lb pork, diced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 bell peppers, diced
  • 1/2 cup green olives, sliced
  • 1/4 cup raisins
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Banana leaves for wrapping

Instructions

  1. In a large bowl, mix the cornmeal and water to form a dough. Set aside.
  2. In a skillet, cook the pork, onion, tomatoes, and bell peppers until the pork is browned and the vegetables are tender.
  3. Stir in the olives, raisins, cilantro, cumin, oregano, salt, and pepper. Cook for an additional 5 minutes.
  4. Divide the cornmeal dough into 6 equal portions. Flatten each portion into a circle on a piece of banana leaf.
  5. Spoon the pork and vegetable mixture onto the center of each circle. Fold the banana leaves over the filling to form a packet.
  6. Steam the nacatamalitos for 1 hour.
  7. Unwrap and serve hot.
