Nacatamalitos (corn Pancake Fiesta)
Nacatamalitos are delicious corn pancakes filled with a savory mixture of meat, vegetables, and spices. This Nicaraguan dish is perfect for a festive breakfast or brunch, and it's sure to be a hit with your family and friends!
Ingredients
- 2 cups cornmeal
- 1 cup water
- 1 lb pork, diced
- 1 onion, chopped
- 2 tomatoes, diced
- 2 bell peppers, diced
- 1/2 cup green olives, sliced
- 1/4 cup raisins
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Banana leaves for wrapping
Instructions
- In a large bowl, mix the cornmeal and water to form a dough. Set aside.
- In a skillet, cook the pork, onion, tomatoes, and bell peppers until the pork is browned and the vegetables are tender.
- Stir in the olives, raisins, cilantro, cumin, oregano, salt, and pepper. Cook for an additional 5 minutes.
- Divide the cornmeal dough into 6 equal portions. Flatten each portion into a circle on a piece of banana leaf.
- Spoon the pork and vegetable mixture onto the center of each circle. Fold the banana leaves over the filling to form a packet.
- Steam the nacatamalitos for 1 hour.
- Unwrap and serve hot.
