Nadru Churma (नद्रू चुरमा)
नद्रू चुरमा (Nadru Churma) is a traditional Kashmiri dish made with lotus stem and flavored with aromatic spices. This dish is a popular part of Kashmiri cuisine and is known for its unique taste and texture.
Ingredients
- 500g lotus stem, peeled and sliced
- 1 cup wheat flour
- 1/2 cup ghee
- 1/2 cup sugar
- 1/2 tsp cardamom powder
- 1/4 cup chopped almonds and pistachios
- Oil for frying
- Salt to taste
Instructions
- Boil the lotus stem slices in salted water until they are tender. Drain and set aside to cool.
- Grind the cooled lotus stem slices to a coarse paste.
- Heat ghee in a pan and add the wheat flour. Roast the flour until it turns golden brown.
- Add the lotus stem paste to the pan and mix well with the roasted flour. Cook for a few minutes.
- Add sugar, cardamom powder, and chopped nuts to the mixture. Mix well and cook until the mixture comes together like a dough.
- Remove from heat and let it cool slightly. Shape the mixture into small round balls or any desired shape.
- Deep fry the shaped mixture in hot oil until they turn golden brown and crispy.
- Remove from oil and drain on a paper towel to remove excess oil.
- नद्रू चुरमा (Nadru Churma) is ready to be served.
