नद्रू चुरमा (Nadru Churma) is a traditional Kashmiri dish made with lotus stem and flavored with aromatic spices. This dish is a popular part of Kashmiri cuisine and is known for its unique taste and texture.

Nadru Churma (नद्रू चुरमा)

Ingredients

  • 500g lotus stem, peeled and sliced
  • 1 cup wheat flour
  • 1/2 cup ghee
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 1/4 cup chopped almonds and pistachios
  • Oil for frying
  • Salt to taste

Instructions

  1. Boil the lotus stem slices in salted water until they are tender. Drain and set aside to cool.
  2. Grind the cooled lotus stem slices to a coarse paste.
  3. Heat ghee in a pan and add the wheat flour. Roast the flour until it turns golden brown.
  4. Add the lotus stem paste to the pan and mix well with the roasted flour. Cook for a few minutes.
  5. Add sugar, cardamom powder, and chopped nuts to the mixture. Mix well and cook until the mixture comes together like a dough.
  6. Remove from heat and let it cool slightly. Shape the mixture into small round balls or any desired shape.
  7. Deep fry the shaped mixture in hot oil until they turn golden brown and crispy.
  8. Remove from oil and drain on a paper towel to remove excess oil.
  9. नद्रू चुरमा (Nadru Churma) is ready to be served.
