Nadru Palak Curry (नद्रू पालक करी)
नद्रू पालक करी (Nadru Palak Curry) is a traditional Kashmiri dish that combines the delicate flavors of lotus stem with the nutritious goodness of spinach. This vegetarian curry is a perfect blend of spices and greens, making it a wholesome and delicious meal.
Ingredients
- 2 lotus stems, peeled and sliced
- 2 cups spinach, chopped
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Water as needed
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add tomato puree and cook until the oil separates.
- Now, add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Add the sliced lotus stems and cook for 5-7 minutes.
- Then, add the chopped spinach and cook until it wilts.
- Sprinkle garam masala and mix gently. Add water if needed to adjust the consistency of the curry.
- Simmer for a few minutes and then turn off the heat.
