Nadru Palak Curry (नद्रू पालक करी)

Ingredients

  • 2 lotus stems, peeled and sliced
  • 2 cups spinach, chopped
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Water as needed

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add tomato puree and cook until the oil separates.
  3. Now, add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes.
  4. Add the sliced lotus stems and cook for 5-7 minutes.
  5. Then, add the chopped spinach and cook until it wilts.
  6. Sprinkle garam masala and mix gently. Add water if needed to adjust the consistency of the curry.
  7. Simmer for a few minutes and then turn off the heat.
