Ingredients

  • 500g pork, cut into cubes
  • 1 cup bamboo shoots, sliced
  • 2 onions, finely chopped
  • 4-5 green chilies, slit
  • 1 inch ginger, grated
  • 5-6 garlic cloves, minced
  • 1 tsp Naga chili paste
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp black pepper powder
  • 2 tbsp mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and sauté the onions, green chilies, ginger, and garlic until the onions turn golden brown.
  2. Add the pork cubes and cook until they are browned on all sides.
  3. Stir in the Naga chili paste, turmeric powder, cumin powder, coriander powder, and black pepper powder. Cook for a few minutes.
  4. Add the sliced bamboo shoots and mix well. Cook for another 10-15 minutes.
  5. Pour in a cup of water, cover the pan, and let the pork and bamboo shoots simmer until tender.
  6. Garnish with fresh coriander leaves before serving.
