Ingredients
- 1 kg pork belly, cut into chunks
- 1 tbsp ginger-garlic paste
- 2 tbsp Naga King Chilli paste
- 1 tsp turmeric powder
- 1 tsp salt
- 1 cup bamboo shoots
- Banana leaves for wrapping
- Wood chips for smoking
Instructions
- Marinate the pork with ginger-garlic paste, Naga King Chilli paste, turmeric powder, and salt. Let it sit for 2 hours.
- Add the bamboo shoots to the marinated pork and mix well.
- Wrap the pork and bamboo shoots mixture in banana leaves, creating a tight parcel.
- Prepare a stovetop smoker with wood chips and place the wrapped pork on the rack.
- Cover the smoker and smoke the pork over low heat for 3 hours, adding more wood chips as needed.
- Once the pork is tender and infused with smoky flavor, remove it from the smoker and unwrap the banana leaves.
