Ingredients

  • 400g Nagoya Cochin chicken, thinly sliced
  • 200g firm tofu, cut into cubes
  • 150g shirataki noodles, rinsed and drained
  • 1 bunch of green onions, cut into 2-inch pieces
  • 1/2 Napa cabbage, sliced
  • 4 shiitake mushrooms, sliced
  • 200g enoki mushrooms, separated
  • 200g shimeji mushrooms, separated
  • 200g konnyaku, sliced
  • 200g udon noodles
  • 4 eggs
  • 500ml sukiyaki broth
  • 4 tbsp soy sauce
  • 4 tbsp mirin
  • 4 tbsp sugar

Instructions

  1. Prepare the sukiyaki broth by combining the sukiyaki broth, soy sauce, mirin, and sugar in a pot. Bring to a simmer over medium heat.
  2. Add the Nagoya Cochin chicken slices to the broth and cook until they are no longer pink.
  3. Add the firm tofu, shirataki noodles, green onions, Napa cabbage, shiitake mushrooms, enoki mushrooms, shimeji mushrooms, and konnyaku to the pot. Cook for a few minutes until the vegetables are tender.
  4. In a separate pot, cook the udon noodles according to the package instructions. Drain and set aside.
  5. Crack an egg into each serving bowl.
  6. Divide the cooked udon noodles among the serving bowls.
  7. Ladle the hot sukiyaki broth and ingredients over the noodles and eggs in each bowl.
  8. Serve the Nagoya Cochin Sukiyaki hot and enjoy!
