Ingredients

  • 2 packages of yakisoba noodles
  • 1 cup cabbage, shredded
  • 1/2 cup green onions, chopped
  • 1/2 cup tenkasu (tempura scraps)
  • 4 eggs
  • 1/4 cup okonomiyaki sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup ketchup
  • 1/4 cup mayonnaise
  • 1/4 cup aonori (dried seaweed flakes)
  • 1/4 cup katsuobushi (bonito flakes)

Instructions

  1. Boil the yakisoba noodles according to the package instructions, then drain and rinse with cold water. Set aside.
  2. In a large bowl, mix the cabbage, green onions, tenkasu, and eggs together.
  3. Heat a non-stick pan over medium heat and add a portion of the cabbage mixture to form a pancake. Place a portion of the yakisoba noodles on top of the pancake and press down gently.
  4. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip the pancake and cook for an additional 3-4 minutes.
  5. Combine the okonomiyaki sauce, Worcestershire sauce, and ketchup in a small bowl. Spread the sauce mixture on top of the pancake.
  6. Drizzle mayonnaise over the pancake and sprinkle with aonori and katsuobushi.
  7. Repeat the process for the remaining ingredients to make additional pancakes.
