Ingredients

  • 500g flat udon noodles
  • 1 block of firm tofu, cubed

  • 4 cups vegetable broth
  • 4 tbsp miso paste
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, chopped

Instructions

  1. In a large pot, bring the vegetable broth to a simmer over medium heat.
  2. Whisk in the miso paste, soy sauce, and sesame oil until well combined.
  3. Add the carrots, tofu, and shiitake mushrooms to the pot and simmer for 10 minutes.
