Ingredients
- 500g flat udon noodles
- 1 block of firm tofu, cubed
- 1 large carrot, sliced
- 4 shiitake mushrooms, sliced
- 4 cups vegetable broth
- 4 tbsp miso paste

- 1 tbsp sesame oil
- 2 green onions, chopped
Instructions
- In a large pot, bring the vegetable broth to a simmer over medium heat.
- Whisk in the miso paste, soy sauce, and sesame oil until well combined.
- Add the carrots, tofu, and shiitake mushrooms to the pot and simmer for 10 minutes.
