Ingredients

  • 4 cups dashi stock
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 1/2 lb thinly sliced pork belly
  • 4 hard-boiled eggs
  • 2 large daikon radishes, peeled and sliced
  • 4 green onions, cut into 2-inch pieces
  • 4 pieces konnyaku (konjac), sliced
  • 4 pieces deep-fried tofu (aburaage)
  • 4 servings of soba noodles

Instructions

  1. In a pot, combine dashi stock, soy sauce, mirin, and sugar. Bring to a simmer over medium heat.
  2. Add the pork belly, daikon radish, and konnyaku to the pot. Simmer for 20 minutes.
  3. Add the deep-fried tofu and hard-boiled eggs to the pot. Simmer for an additional 10 minutes.
  4. Cook the soba noodles according to the package instructions.
  5. Divide the cooked soba noodles into serving bowls and ladle the hot pot ingredients and sauce over the noodles.
  6. Garnish with green onions and serve hot.
