Nahud (hearty Chickpea Stew)
Nahud, also known as Hearty Chickpea Stew, is a traditional dish in Bukharan Jewish Cuisine. This warm and comforting stew is packed with flavor and nutrition, making it a perfect meal for any time of the year.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 6 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat some oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrots and potatoes, and cook for 5 minutes.
- Stir in the soaked chickpeas, cumin, and paprika.
- Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat, cover the pot, and let the stew simmer for 1 hour, or until the chickpeas are tender.
- Season with salt and pepper to taste.
- Serve the Nahud hot, garnished with fresh herbs if desired.
