Ingredients
- 2 cups cooked jasmine rice
- 1/2 cup shredded coconut
- 1/4 cup chopped peanuts
- 1/4 cup chopped cilantro
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1/2 teaspoon chili flakes
- 1/4 cup chopped green onions
- 1/4 cup shredded carrots
- 1/4 cup chopped mint leaves
- 1/4 cup chopped shallots
- 1/4 cup cooked ground pork
Instructions
- In a large bowl, mix the cooked jasmine rice, shredded coconut, chopped peanuts, cilantro, fish sauce, lime juice, sugar, and chili flakes.
- Add the green onions, shredded carrots, mint leaves, shallots, and cooked ground pork to the bowl and mix well.
- Heat a pan over medium heat and add the rice mixture, pressing it down to form a large patty. Cook until the bottom is crispy and golden brown, then flip and cook the other side.
- Remove the crispy rice from the pan and break it into bite-sized pieces.
- Serve the crispy rice salad on a platter and enjoy!
