Nam Khao, also known as Crispy Rice Salad, is a popular dish in Lao cuisine. This flavorful and crunchy salad is made with crispy rice, fermented pork sausage, herbs, and a tangy dressing.
Ingredients
- 3 cups cooked jasmine rice
- 1/2 cup shredded coconut
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup chopped lemongrass
- 1/4 cup chopped shallots
- 1/4 cup chopped peanuts
- 1/4 cup fish sauce
- 2 tablespoons lime juice
- 2 tablespoons sugar
- 1/2 cup fermented pork sausage, crumbled
- 1/4 cup vegetable oil
Instructions
- In a large bowl, combine the cooked jasmine rice, shredded coconut, green onions, cilantro, mint, lemongrass, shallots, and peanuts.
- In a small bowl, whisk together the fish sauce, lime juice, and sugar to make the dressing.
- Drizzle the dressing over the rice mixture and toss to combine.
- Add the crumbled fermented pork sausage and mix well.
- Heat the vegetable oil in a large skillet over medium heat.
- Add the rice mixture to the skillet and press it down to form a pancake.
- Cook for 5-7 minutes until the bottom is crispy, then flip and cook for an additional 5-7 minutes.
- Transfer the crispy rice salad to a serving platter and serve immediately.
