Ingredients

  • 3 cups cooked jasmine rice
  • 1/2 cup shredded coconut
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/4 cup chopped lemongrass
  • 1/4 cup chopped shallots
  • 1/4 cup chopped peanuts
  • 1/4 cup fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons sugar
  • 1/2 cup fermented pork sausage, crumbled
  • 1/4 cup vegetable oil

Instructions

  1. In a large bowl, combine the cooked jasmine rice, shredded coconut, green onions, cilantro, mint, lemongrass, shallots, and peanuts.
  2. In a small bowl, whisk together the fish sauce, lime juice, and sugar to make the dressing.
  3. Drizzle the dressing over the rice mixture and toss to combine.
  4. Add the crumbled fermented pork sausage and mix well.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Add the rice mixture to the skillet and press it down to form a pancake.
  7. Cook for 5-7 minutes until the bottom is crispy, then flip and cook for an additional 5-7 minutes.
  8. Transfer the crispy rice salad to a serving platter and serve immediately.
