Ingredients

  • 1.5 kg beef, cubed
  • 3 onions, chopped
  • 4 garlic cloves, minced
  • 3 large carrots, sliced
  • 3 potatoes, cubed
  • 2 tomatoes, chopped
  • 2 cups beef stock
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large potjie pot over medium heat.
  2. Add the beef cubes and brown them on all sides. Remove and set aside.
  3. In the same pot, sauté the onions and garlic until softened.
  4. Return the beef to the pot and add the carrots, potatoes, tomatoes, beef stock, red wine, bay leaves, paprika, coriander, salt, and pepper.
  5. Bring the potjie to a simmer, then cover and let it cook for 2 hours, stirring occasionally.
