Ingredients
- 1.5 kg beef, cubed
- 3 onions, chopped
- 4 garlic cloves, minced
- 3 large carrots, sliced
- 3 potatoes, cubed
- 2 tomatoes, chopped
- 2 cups beef stock
- 1 cup red wine
- 2 bay leaves
- 1 tsp paprika
- 1/2 tsp ground coriander
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large potjie pot over medium heat.
- Add the beef cubes and brown them on all sides. Remove and set aside.
- In the same pot, sauté the onions and garlic until softened.
- Return the beef to the pot and add the carrots, potatoes, tomatoes, beef stock, red wine, bay leaves, paprika, coriander, salt, and pepper.
- Bring the potjie to a simmer, then cover and let it cook for 2 hours, stirring occasionally.
