Ingredients
- 500g beef, cubed
- 2 onions, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 cup Mopane leaves
- 2 tbsp vegetable oil
- 2 tsp curry powder
- 1 tsp paprika
- 1 tsp ground coriander
- Salt and pepper to taste
- 4 cups beef broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until the onions are translucent.
- Add the beef cubes and brown on all sides.
- Stir in the curry powder, paprika, and ground coriander, and cook for 1-2 minutes.
- Add the diced tomatoes, Mopane leaves, and beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 hours, or until the beef is tender.
- Serve the Namibian Beef Sishebo hot with rice or pap (maize porridge).
