Namibian Beef Sishebo with Mopane Leaves (Namibisches Rindfleisch Sishebo mit Mopane Blättern)

Ingredients

  • 500g beef, cubed
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 cup Mopane leaves
  • 2 tbsp vegetable oil
  • 2 tsp curry powder
  • 1 tsp paprika
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 4 cups beef broth

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the curry powder, paprika, and ground coriander, and cook for 1-2 minutes.
  5. Add the diced tomatoes, Mopane leaves, and beef broth. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 hours, or until the beef is tender.
  7. Serve the Namibian Beef Sishebo hot with rice or pap (maize porridge).
