Ingredients
- 500g beef sirloin, thinly sliced
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 200g mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons flour
- Salt and pepper to taste
- 2 cups cooked rice
- 1 teaspoon paprika
- Fresh parsley for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef slices and cook until browned. Remove the beef from the skillet and set aside.
- Heat the remaining olive oil in the same skillet. Add the onion and garlic, and sauté until softened.
- Add the sliced bell peppers and mushrooms to the skillet, and cook until they begin to soften.
- Sprinkle the flour over the vegetables and stir to combine.
- Pour in the beef broth and bring the mixture to a simmer, allowing it to thicken.
- Return the cooked beef to the skillet and stir in the sour cream. Season with salt and pepper to taste.
- In a separate pot, mix the cooked rice with paprika until well combined.
- Serve the beef stroganoff over the paprika rice, garnished with fresh parsley.
