Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 cup chicken broth
- 1 cup red wine
- 2 bay leaves
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 4 large sweet potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk
Instructions
- Heat a large pot or Dutch oven over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken and set aside.
- In the same pot, add the chopped onions and garlic. Sauté until the onions are translucent.
- Add the diced tomatoes, chicken broth, red wine, bay leaves, paprika, coriander, cumin, salt, and pepper. Stir to combine.
- Return the browned chicken pieces to the pot. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and tender.
- While the chicken is cooking, place the cubed sweet potatoes in a separate pot and cover with water. Boil until the sweet potatoes are tender, then drain.
- Mash the sweet potatoes with butter and milk until smooth and creamy. Season with salt and pepper to taste.
