Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into strips
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) honey
- 2 cloves garlic, minced
- 1 teaspoon (5g) ground cumin
- 1 teaspoon (5g) ground coriander
- 1/2 teaspoon (3g) turmeric
- 1/4 teaspoon (1g) cayenne pepper
- 1/2 cup (120g) creamy peanut butter
- 1/4 cup (60ml) coconut milk
- 2 tablespoons (30ml) lime juice
- 1 tablespoon (15ml) soy sauce
- 1 tablespoon (15ml) honey
- 1/4 teaspoon (1g) red pepper flakes
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine the soy sauce, honey, minced garlic, cumin, coriander, turmeric, and cayenne pepper. Add the chicken strips and marinate for at least 30 minutes.
- Thread the marinated chicken strips onto the soaked wooden skewers.
- Preheat the grill to medium-high heat. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.
- While the chicken is grilling, prepare the peanut sauce. In a saucepan, combine the peanut butter, coconut milk, lime juice, soy sauce, honey, and red pepper flakes. Cook over low heat, stirring constantly, until the sauce is smooth and heated through. Season with salt and pepper to taste.
- Serve the grilled chicken satay skewers with the warm peanut sauce on the side.
