Namibian Game Biryani with Spiced Butter (Namibisches Wild Biryani mit gewürzter Butter)

Ingredients

  • 500g game meat, cubed
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon saffron threads
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/2 cup plain yogurt
  • 4 tablespoons butter
  • Salt to taste

Instructions

  1. Marinate the game meat in yogurt, ginger, garlic, and half of the chopped cilantro and mint for at least 1 hour.
  2. Rinse the basmati rice until the water runs clear, then soak for 30 minutes.
  3. In a large pot, heat 2 tablespoons of butter and sauté the onions until golden brown.
  4. Add the marinated game meat and cook until browned.
  5. Stir in the cinnamon stick, cardamom pods, cumin seeds, coriander powder, turmeric, and chili powder.
  6. Layer the soaked basmati rice over the meat, then pour in enough water to cover the rice by 1 inch. Add saffron threads and salt.
  7. Cover and cook on low heat for 20 minutes, or until the rice is tender and the liquid is absorbed.
  8. In a small saucepan, melt the remaining 2 tablespoons of butter and add the remaining cilantro and mint. Cook until the butter is fragrant and golden.
  9. Drizzle the spiced butter over the biryani before serving.
