Namibian Game Biryani is a flavorful and aromatic dish that combines tender game meat with fragrant spices and basmati rice. This recipe adds a twist with a spiced butter topping, adding an extra layer of richness and flavor to the dish.
Ingredients
- 500g game meat, cubed
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 cinnamon stick
- 4 cardamom pods
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1/4 teaspoon saffron threads
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/2 cup plain yogurt
- 4 tablespoons butter
- Salt to taste
Instructions
- Marinate the game meat in yogurt, ginger, garlic, and half of the chopped cilantro and mint for at least 1 hour.
- Rinse the basmati rice until the water runs clear, then soak for 30 minutes.
- In a large pot, heat 2 tablespoons of butter and sauté the onions until golden brown.
- Add the marinated game meat and cook until browned.
- Stir in the cinnamon stick, cardamom pods, cumin seeds, coriander powder, turmeric, and chili powder.
- Layer the soaked basmati rice over the meat, then pour in enough water to cover the rice by 1 inch. Add saffron threads and salt.
- Cover and cook on low heat for 20 minutes, or until the rice is tender and the liquid is absorbed.
- In a small saucepan, melt the remaining 2 tablespoons of butter and add the remaining cilantro and mint. Cook until the butter is fragrant and golden.
- Drizzle the spiced butter over the biryani before serving.
