Namibian Lamb Curry Potjie with Pumpkin Pap (Namibisches Lammcurry Potjie mit Kürbispap)

Ingredients

  • 1.5 kg lamb, cut into chunks
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tbsp curry powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 cinnamon stick
  • 4 cups beef or lamb stock
  • 1 kg pumpkin, peeled and cubed
  • 2 cups maize meal
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a large potjie pot over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onions and sauté until translucent. Add the minced garlic, curry powder, ground coriander, ground cumin, turmeric, and cinnamon stick. Cook for a few minutes until fragrant.
  3. Return the browned lamb to the pot. Pour in the beef or lamb stock and bring to a simmer. Cover the potjie with a lid and let the lamb simmer for 1.5 hours, or until tender.
  4. While the lamb is simmering, prepare the pumpkin pap. In a separate pot, bring 6 cups of water to a boil. Add the cubed pumpkin and cook until tender. Mash the cooked pumpkin and gradually stir in the maize meal until the mixture thickens. Season with salt and pepper.
