Namibian Lamb Curry Potjie with Pumpkin Pap (Namibisches Lammcurry Potjie mit Kürbispap)

Ingredients
- 1.5 kg lamb, cut into chunks
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tbsp curry powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 cinnamon stick
- 4 cups beef or lamb stock
- 1 kg pumpkin, peeled and cubed
- 2 cups maize meal
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a large potjie pot over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onions and sauté until translucent. Add the minced garlic, curry powder, ground coriander, ground cumin, turmeric, and cinnamon stick. Cook for a few minutes until fragrant.
- Return the browned lamb to the pot. Pour in the beef or lamb stock and bring to a simmer. Cover the potjie with a lid and let the lamb simmer for 1.5 hours, or until tender.
- While the lamb is simmering, prepare the pumpkin pap. In a separate pot, bring 6 cups of water to a boil. Add the cubed pumpkin and cook until tender. Mash the cooked pumpkin and gradually stir in the maize meal until the mixture thickens. Season with salt and pepper.
- Serve the Namibian Lamb Curry Potjie with Pumpkin Pap hot, garnished with fresh cilantro.
