  • For the dumplings:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 3/4 cup milk
  • 3 tbsp melted butter

Instructions

  1. In a large pot, brown the oxtail pieces over medium-high heat.
  2. Add the onions, carrots, celery, and garlic. Cook until the vegetables are softened.
  3. Stir in the bay leaves, thyme, and paprika. Pour in the red wine and beef stock. Season with salt and pepper.
  4. Cover and simmer for 2.5 to 3 hours, or until the oxtail is tender.
  5. To make the dumplings, mix the flour, baking powder, salt, and parsley in a bowl. Stir in the milk and melted butter until just combined.
  6. Drop spoonfuls of the dumpling mixture on top of the simmering stew. Cover and cook for 15 minutes until the dumplings are cooked through.
  7. Sprinkle with chopped parsley before serving.
