- 1.5 kg oxtail, cut into pieces

- 1/2 cup red wine
- 4 cups beef stock

- For the dumplings:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup chopped fresh parsley
- 3/4 cup milk
- 3 tbsp melted butter
Instructions
- In a large pot, brown the oxtail pieces over medium-high heat.
- Add the onions, carrots, celery, and garlic. Cook until the vegetables are softened.
- Stir in the bay leaves, thyme, and paprika. Pour in the red wine and beef stock. Season with salt and pepper.
- Cover and simmer for 2.5 to 3 hours, or until the oxtail is tender.
- To make the dumplings, mix the flour, baking powder, salt, and parsley in a bowl. Stir in the milk and melted butter until just combined.
- Drop spoonfuls of the dumpling mixture on top of the simmering stew. Cover and cook for 15 minutes until the dumplings are cooked through.
- Sprinkle with chopped parsley before serving.
