Ingredients

  • 500g minced lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 slices white bread, soaked in milk
  • 2 tbsp curry powder
  • 1 tbsp apricot jam
  • 1 tbsp vinegar
  • 1/4 cup raisins
  • 3 eggs
  • 1 1/2 cups cooked yellow rice
  • 1/4 cup slivered almonds
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, brown the minced lamb over medium heat. Add the chopped onion and garlic, and cook until the onion is soft.
  3. Stir in the curry powder, apricot jam, vinegar, and raisins. Season with salt and pepper.
  4. Transfer the lamb mixture to a baking dish and spread it evenly.
  5. In a bowl, beat 2 eggs and pour over the lamb mixture. Arrange the soaked bread on top.
  6. Beat the remaining egg and pour it over the bread. Sprinkle with slivered almonds.
  7. Bake for 30-40 minutes, or until the custard is set and golden brown.
  8. Serve the Namibian Lamb Bobotie with yellow rice.
