Nanaimo Bar Sweet and Sour Pork (奈良莫巧克力糖醋猪肉)

Ingredients
- 1 pound pork loin, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup vegetable oil for frying
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 cup pineapple chunks
- 1/2 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1/4 cup ketchup
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger, grated
- 1/2 cup Nanaimo bar crumbs
Instructions
- In a large bowl, toss the pork pieces with cornstarch until well coated. Dip each piece into the beaten eggs, then set aside on a plate.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the pork pieces in batches until golden brown and crispy. Remove and drain on paper towels.
- Discard all but 2 tablespoons of the oil from the wok. Add the bell peppers and pineapple chunks, and stir-fry for 2-3 minutes.
- In a small bowl, mix together the sugar, vinegar, ketchup, soy sauce, garlic powder, and grated ginger. Pour this sauce over the vegetables in the wok and bring to a simmer.
- Add the fried pork pieces to the wok and toss to coat with the sweet and sour sauce. Cook for an additional 2-3 minutes until everything is heated through.
- Sprinkle the Nanaimo bar crumbs over the sweet and sour pork just before serving to add a unique and delicious twist to the dish.
