Nandu Curry (spicy Jaffna Crab Curry)

Ingredients
- 1 kg fresh crab, cleaned and cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- 2 tablespoons chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 cup thick coconut milk
- Salt to taste
- 2 tablespoons oil
- Fresh curry leaves
Instructions
- Heat oil in a large pan and sauté the onions until golden brown.
- Add the ginger-garlic paste and green chilies, and sauté for a few minutes.
- Stir in the tomatoes, turmeric powder, chili powder, coriander powder, and cumin powder. Cook until the tomatoes are soft and the oil separates.
- Add the crab pieces and mix well to coat them with the spice mixture.
- Pour in the thick coconut milk and season with salt. Simmer for 15-20 minutes until the crab is cooked through.
- Garnish with fresh curry leaves and serve hot with steamed rice.
