Ingredients

  • 500g young jackfruit, cut into bite-sized pieces
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 tomatoes, diced
  • 1/4 cup tamarind juice
  • 3 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a pan over medium heat. Sauté the onion and garlic until fragrant.
  2. Add the jackfruit, red bell pepper, and green bell pepper. Cook for 5 minutes.
  3. Pour in the tamarind juice, soy sauce, sugar, salt, and water. Stir well and bring to a simmer.
  4. Add the diced tomatoes and continue to cook for another 10 minutes, or until the jackfruit is tender and the sauce has thickened.
  5. Once cooked, remove from heat and serve hot.
