Ingredients
- 500g young jackfruit, cut into bite-sized pieces
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 tomatoes, diced
- 1/4 cup tamarind juice
- 3 tablespoons soy sauce
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cup water
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a pan over medium heat. Sauté the onion and garlic until fragrant.
- Add the jackfruit, red bell pepper, and green bell pepper. Cook for 5 minutes.
- Pour in the tamarind juice, soy sauce, sugar, salt, and water. Stir well and bring to a simmer.
- Add the diced tomatoes and continue to cook for another 10 minutes, or until the jackfruit is tender and the sauce has thickened.
- Once cooked, remove from heat and serve hot.
