Naniura (spicy Shrimp Paste Fried Rice)
Naniura is a traditional Batak dish from Indonesia, featuring spicy shrimp paste fried rice that is packed with bold flavors. This dish is perfect for those who love a bit of heat and a lot of savory goodness.
Ingredients
- 2 cups cooked white rice
- 200g shrimp, peeled and deveined
- 3 tbsp spicy shrimp paste (terasi)
- 3 cloves garlic, minced
- 2 red chilies, finely chopped
- 1 small onion, finely chopped
- 2 eggs
- 3 tbsp vegetable oil
- Salt to taste
- Pepper to taste
Instructions
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.
- Add the minced garlic, chopped red chilies, and chopped onion. Sauté until fragrant.
- Add the shrimp and cook until they turn pink and opaque. Remove the shrimp from the wok and set aside.
- In the same wok, add another tablespoon of vegetable oil. Add the cooked rice and spicy shrimp paste. Stir-fry for 3-4 minutes.
- Push the rice to one side of the wok and crack the eggs into the empty space. Scramble the eggs and mix them into the rice.
- Return the cooked shrimp to the wok and stir to combine with the rice and eggs.
- Season with salt and pepper to taste. Stir well to ensure everything is evenly seasoned.
- Transfer the naniura to a serving dish and garnish with additional chopped chilies if desired.
