Nariyal Bhaat (fluffy Coconut Rice)
Nariyal Bhaat, also known as Fluffy Coconut Rice, is a popular South Indian dish that is simple to make and bursting with flavor. This aromatic and creamy rice dish is perfect for pairing with spicy curries or enjoying on its own.
Ingredients
- 2 cups basmati rice
- 1 1/2 cups coconut milk
- 1 1/2 cups water
- 1/2 cup shredded coconut
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 green chilies, slit lengthwise
- 1/4 cup cashews
- 1/4 cup raisins
- 2 tablespoons coconut oil
- Salt to taste
Instructions
- Rinse the basmati rice until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
- In a large pot, heat the coconut oil over medium heat. Add the cumin seeds, mustard seeds, and green chilies. Sauté for 1-2 minutes until the seeds start to splutter.
- Add the cashews and raisins to the pot and sauté until the cashews turn golden brown.
- Stir in the shredded coconut and sauté for another 1-2 minutes.
- Pour in the coconut milk, water, and salt. Bring the mixture to a boil.
- Stir in the soaked and drained rice. Reduce the heat to low, cover the pot, and let the rice simmer for 15-20 minutes until it's fully cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
