Ingredients
- 1 cup coconut milk
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 2 cups mixed vegetables (such as carrots, peas, and bell peppers)
- Salt to taste
- 2 tbsp fresh cilantro, chopped
Instructions
- Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and green chilies. Cook for 2 minutes.
- Add the ground coriander, turmeric powder, and red chili powder. Mix well and cook for a minute.
- Pour in the coconut milk and bring the curry to a gentle simmer.
- Add the mixed vegetables and season with salt. Cover and cook for 10-15 minutes, or until the vegetables are tender.
- Garnish with fresh cilantro before serving.
