Nariyal Ki Sabzi, also known as Creamy Coconut Curry, is a popular dish in Jain Cuisine. This rich and flavorful curry is made with coconut milk, aromatic spices, and fresh vegetables, making it a perfect dish for a hearty meal.
Ingredients
- 2 cups coconut milk
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 tsp cumin seeds
- 1 tsp ginger paste
- 1 tsp green chili paste
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp cooking oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add ginger paste and green chili paste. Sauté for a minute.
- Add mixed vegetables and sauté for 2-3 minutes.
- Pour in the coconut milk and mix well.
- Add turmeric powder, coriander powder, garam masala, and salt. Stir to combine.
- Cover and cook for 10-12 minutes on low heat.
- Garnish with fresh cilantro and serve hot with steamed rice or roti.
