Nariyal Ki Sabzi (creamy Coconut Curry)

Ingredients

  • 2 cups coconut milk
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 tsp cumin seeds
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp cooking oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add ginger paste and green chili paste. Sauté for a minute.
  3. Add mixed vegetables and sauté for 2-3 minutes.
  4. Pour in the coconut milk and mix well.
  5. Add turmeric powder, coriander powder, garam masala, and salt. Stir to combine.
  6. Cover and cook for 10-12 minutes on low heat.
  7. Garnish with fresh cilantro and serve hot with steamed rice or roti.
