Ingredients
- 1 can (14 oz) coconut milk
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
- 2 cups mixed vegetables (such as carrots, bell peppers, and peas)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion, garlic, ginger, and green chili. Sauté until the onion is soft and translucent.
- Stir in the ground coriander, turmeric, and red chili powder. Cook for a minute to toast the spices.
- Pour in the coconut milk and bring the curry to a gentle simmer.
- Add the mixed vegetables and simmer for 15-20 minutes, or until the vegetables are tender.
- Season with salt to taste and garnish with fresh cilantro before serving.
