Narkel Dal (creamy Coconut Lentil Curry)
Narkel Dal, also known as Creamy Coconut Lentil Curry, is a popular dish in Bangladeshi cuisine. This flavorful and creamy curry is made with red lentils, coconut milk, and a blend of aromatic spices.
Ingredients
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp chili powder
- Salt to taste
- 2 tbsp vegetable oil
- 2 cups water
Instructions
- Rinse the red lentils and soak them in water for 15 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger, and cook for 2 minutes.
- Stir in the turmeric, cumin powder, coriander powder, and chili powder. Cook for another 2 minutes.
- Add the diced tomatoes and cook until they soften.
- Drain the soaked lentils and add them to the pot. Pour in the coconut milk and water. Season with salt.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender and the curry has thickened.
- Adjust the seasoning if needed and serve hot with rice or naan.
