Narkel Dal (creamy Coconut Lentil Curry)

Ingredients

  • 1 cup red lentils
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chili powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • 2 cups water

Instructions

  1. Rinse the red lentils and soak them in water for 15 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
  3. Add the minced garlic and grated ginger, and cook for 2 minutes.
  4. Stir in the turmeric, cumin powder, coriander powder, and chili powder. Cook for another 2 minutes.
  5. Add the diced tomatoes and cook until they soften.
  6. Drain the soaked lentils and add them to the pot. Pour in the coconut milk and water. Season with salt.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender and the curry has thickened.
  8. Adjust the seasoning if needed and serve hot with rice or naan.
