Narkel Kumro Tarkari, also known as Coconut and Pumpkin Curry, is a traditional Bangladeshi dish that is both flavorful and nutritious. This vegetarian curry is made with tender pumpkin pieces cooked in a creamy coconut sauce, infused with aromatic spices.
Ingredients
- 2 cups pumpkin, diced
- 1 cup coconut milk
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 green chili, sliced
- 2 tablespoons oil
- Salt to taste
Instructions
- Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.
- Add the turmeric, cumin powder, and coriander powder. Stir well.
- Add the diced pumpkin and green chili. Cook for 5 minutes.
- Pour in the coconut milk and season with salt. Simmer for 15 minutes until the pumpkin is tender.
- Once the curry thickens, remove from heat and serve hot with rice or flatbread.
