Ingredients

  • 2 cups pumpkin, diced
  • 1 cup coconut milk

  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 green chili, sliced
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.
  2. Add the turmeric, cumin powder, and coriander powder. Stir well.
  3. Add the diced pumpkin and green chili. Cook for 5 minutes.
  4. Pour in the coconut milk and season with salt. Simmer for 15 minutes until the pumpkin is tender.
  5. Once the curry thickens, remove from heat and serve hot with rice or flatbread.
