Narkel Murgh Malai (creamy Coconut Chicken Curry)

Ingredients

  • 500g boneless, skinless chicken thighs, cut into cubes
  • 1 cup coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit lengthwise
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the onions until golden brown.
  2. Add the minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
  3. Add the chicken cubes and cook until they are no longer pink.
  4. Stir in the turmeric, cumin, coriander, and red chili powders. Cook for a couple of minutes.
  5. Pour in the coconut milk and season with salt. Simmer for 15-20 minutes until the chicken is cooked through and the sauce thickens.
  6. Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
