Ingredients

  • 2 cups grated coconut

  • 1 cup mixed vegetables (carrots, green beans, potatoes, cauliflower)
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 2 tbsp vegetable oil
  • Salt to taste
  • 2 cups water

Instructions

  1. In a pan, heat the vegetable oil over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the grated coconut and continue to sauté until it turns light brown and releases a nutty aroma.
  4. Add the diced tomatoes and cook until they soften.
  5. Add the mixed vegetables, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  6. Pour in the water and bring the mixture to a boil. Then, reduce the heat and let it simmer until the vegetables are cooked through.
  7. Once the vegetables are tender, remove from heat and serve hot.
