Ingredients
- 2 cups grated coconut
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 cup mixed vegetables (carrots, green beans, potatoes, cauliflower)
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 2 tbsp vegetable oil
- Salt to taste
- 2 cups water
Instructions
- In a pan, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Add the grated coconut and continue to sauté until it turns light brown and releases a nutty aroma.
- Add the diced tomatoes and cook until they soften.
- Add the mixed vegetables, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
- Pour in the water and bring the mixture to a boil. Then, reduce the heat and let it simmer until the vegetables are cooked through.
- Once the vegetables are tender, remove from heat and serve hot.
