Ingredients

  • 1 whole chicken, about 3-4 lbs
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 stalks green onions, chopped
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1/2 tsp sugar
  • 4 cups chicken broth

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the whole chicken and cook for 30-40 minutes until fully cooked. Remove the chicken and let it cool. Reserve the chicken broth for cooking the rice.
  2. Rinse the jasmine rice under cold water until the water runs clear. Drain the rice and set aside.
  3. In a separate pot, heat the sesame oil over medium heat. Add the minced garlic and ginger slices, and sauté until fragrant.
  4. Add the drained rice to the pot and stir to coat the rice with the aromatic oil. Season with salt and sugar, then pour in 4 cups of the reserved chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  5. While the rice is cooking, debone the cooked chicken and slice it into serving pieces. Serve the chicken with the fragrant rice, garnished with chopped green onions.
