Nasi Dagang Delight

Ingredients

  • 2 cups of jasmine rice
  • 1 cup of coconut milk
  • 1 inch of fresh turmeric, grated
  • 3 cloves of garlic, minced
  • 1 tablespoon of fish sauce
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of salt
  • 4 pieces of mackerel fish
  • 2 tablespoons of cooking oil
  • 1/2 cup of sliced shallots
  • 1/4 cup of chopped lemongrass
  • 1/4 cup of sliced garlic
  • 1/4 cup of dried chili, soaked and blended
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of fennel powder
  • 1 cup of coconut milk
  • 1 cup of water

Instructions

  1. In a pot, combine the jasmine rice, coconut milk, grated turmeric, minced garlic, fish sauce, black pepper, and salt. Cook the rice mixture in a rice cooker or on the stovetop until done.
  2. Season the mackerel fish with salt and pepper. In a pan, heat the cooking oil over medium heat and fry the fish until golden brown and cooked through. Set aside.
  3. In the same pan, sauté the shallots, lemongrass, garlic, and blended dried chili until fragrant.
  4. Add the coriander powder, cumin powder, and fennel powder to the pan and continue to cook until the oil separates.
  5. Pour in the coconut milk and water, then add the fried mackerel fish. Simmer the curry for 10-15 minutes until the flavors are well combined.
  6. Serve the Nasi Dagang with the fish curry on the side.
