Nasi Dagang Delight

Ingredients
- 2 cups of jasmine rice
- 1 cup of coconut milk
- 1 inch of fresh turmeric, grated
- 3 cloves of garlic, minced
- 1 tablespoon of fish sauce
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of salt
- 4 pieces of mackerel fish
- 2 tablespoons of cooking oil
- 1/2 cup of sliced shallots
- 1/4 cup of chopped lemongrass
- 1/4 cup of sliced garlic
- 1/4 cup of dried chili, soaked and blended
- 1 teaspoon of coriander powder
- 1/2 teaspoon of cumin powder
- 1/2 teaspoon of fennel powder
- 1 cup of coconut milk
- 1 cup of water
Instructions
- In a pot, combine the jasmine rice, coconut milk, grated turmeric, minced garlic, fish sauce, black pepper, and salt. Cook the rice mixture in a rice cooker or on the stovetop until done.
- Season the mackerel fish with salt and pepper. In a pan, heat the cooking oil over medium heat and fry the fish until golden brown and cooked through. Set aside.
- In the same pan, sauté the shallots, lemongrass, garlic, and blended dried chili until fragrant.
- Add the coriander powder, cumin powder, and fennel powder to the pan and continue to cook until the oil separates.
- Pour in the coconut milk and water, then add the fried mackerel fish. Simmer the curry for 10-15 minutes until the flavors are well combined.
- Serve the Nasi Dagang with the fish curry on the side.
