Nasi Goreng Belacan (spicy Shrimp Paste Fried Rice)

Ingredients
- 3 cups cooked white rice
- 200g shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 2 red chilies, sliced
- 1 tablespoon belacan (shrimp paste)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 tablespoons vegetable oil
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
- Add the shrimp and stir-fry until they turn pink. Remove the shrimp from the wok and set aside.
- In the same wok, add the remaining 1 tablespoon of vegetable oil. Sauté the garlic, shallots, and chilies until fragrant.
- Add the belacan (shrimp paste) and continue to stir-fry for another minute.
- Push the aromatics to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set.
- Add the cooked rice, soy sauce, sweet soy sauce, sugar, salt, and white pepper. Stir-fry the rice until well combined with the other ingredients.
- Return the cooked shrimp to the wok and toss everything together until heated through.
- Transfer the Nasi Goreng Belacan to serving plates and serve hot.
