Nasi Goreng Belacan (spicy Shrimp Paste Fried Rice)

Ingredients

  • 3 cups cooked white rice
  • 200g shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 2 red chilies, sliced
  • 1 tablespoon belacan (shrimp paste)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
  2. Add the shrimp and stir-fry until they turn pink. Remove the shrimp from the wok and set aside.
  3. In the same wok, add the remaining 1 tablespoon of vegetable oil. Sauté the garlic, shallots, and chilies until fragrant.
  4. Add the belacan (shrimp paste) and continue to stir-fry for another minute.
  5. Push the aromatics to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set.
  6. Add the cooked rice, soy sauce, sweet soy sauce, sugar, salt, and white pepper. Stir-fry the rice until well combined with the other ingredients.
  7. Return the cooked shrimp to the wok and toss everything together until heated through.
  8. Transfer the Nasi Goreng Belacan to serving plates and serve hot.
