Ingredients
- 3 cups cooked white rice, cooled
- 200g salted fish, deboned and shredded
- 3 eggs, beaten
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 red chilies, sliced
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 tablespoon soy sauce
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon sugar
- 1/2 teaspoon ground white pepper
- 4 tablespoons vegetable oil
Instructions
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 2 tablespoons of oil in the same wok. Add the garlic, shallots, and chilies. Sauté until fragrant.
- Add the shredded salted fish and cook for 2-3 minutes.
- Stir in the sweet soy sauce, soy sauce, shrimp paste, sugar, and white pepper.
- Add the cooked rice to the wok and stir-fry until well combined and heated through.
- Return the scrambled eggs to the wok and mix with the rice.
- Transfer the Nasi Goreng Ikan Asin to serving plates and serve hot.
