Nasi Goreng Ikan Asin (fried Rice With Salted Fish)

Ingredients

  • 3 cups cooked white rice, cooled
  • 200g salted fish, deboned and shredded
  • 3 eggs, beaten
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, sliced
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 4 tablespoons vegetable oil

Instructions

  1. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 2 tablespoons of oil in the same wok. Add the garlic, shallots, and chilies. Sauté until fragrant.
  4. Add the shredded salted fish and cook for 2-3 minutes.
  5. Stir in the sweet soy sauce, soy sauce, shrimp paste, sugar, and white pepper.
  6. Add the cooked rice to the wok and stir-fry until well combined and heated through.
  7. Return the scrambled eggs to the wok and mix with the rice.
  8. Transfer the Nasi Goreng Ikan Asin to serving plates and serve hot.
