Nasi Goreng Ikan Asin (salted Fish Fried Rice)

Ingredients

  • 3 cups cooked white rice, preferably leftover and chilled
  • 150g salted fish, deboned and shredded
  • 3 eggs, beaten
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, sliced (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon shrimp paste (terasi), toasted
  • 1 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 4 tablespoons vegetable oil

Instructions

  1. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  2. Heat the remaining 2 tablespoons of vegetable oil in the same wok. Add the minced garlic, sliced shallots, and red chilies. Sauté until fragrant.
  3. Add the shredded salted fish to the wok and stir-fry for 2-3 minutes.
  4. Push the ingredients to one side of the wok and add the chilled cooked rice. Break up any clumps and stir-fry with the other ingredients.
  5. Add the soy sauce, sweet soy sauce, shrimp paste, sugar, and ground white pepper to the wok. Mix well with the rice and other ingredients.
  6. Return the scrambled eggs to the wok and toss everything together until well combined and heated through.
  7. Transfer the Nasi Goreng Ikan Asin to serving plates and garnish with additional sliced red chilies, if desired.
