Nasi Goreng Ikan Asin (salted Fish Fried Rice)
Nasi Goreng Ikan Asin, or Salted Fish Fried Rice, is a popular dish in Indonesian Chinese cuisine. It is a flavorful and satisfying meal that is easy to prepare and perfect for using up leftover rice.
Ingredients
- 3 cups cooked white rice, preferably leftover and chilled
- 150g salted fish, deboned and shredded
- 3 eggs, beaten
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 red chilies, sliced (optional)
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon shrimp paste (terasi), toasted
- 1 teaspoon sugar
- 1/2 teaspoon ground white pepper
- 4 tablespoons vegetable oil
Instructions
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 2 tablespoons of vegetable oil in the same wok. Add the minced garlic, sliced shallots, and red chilies. Sauté until fragrant.
- Add the shredded salted fish to the wok and stir-fry for 2-3 minutes.
- Push the ingredients to one side of the wok and add the chilled cooked rice. Break up any clumps and stir-fry with the other ingredients.
- Add the soy sauce, sweet soy sauce, shrimp paste, sugar, and ground white pepper to the wok. Mix well with the rice and other ingredients.
- Return the scrambled eggs to the wok and toss everything together until well combined and heated through.
- Transfer the Nasi Goreng Ikan Asin to serving plates and garnish with additional sliced red chilies, if desired.
