Ingredients
- 4 cups cooked white rice, preferably day-old
- 2 eggs, beaten
- 200g chicken breast, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 3 tablespoons sweet soy sauce (kecap manis)
- 2 tablespoons soy sauce
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
- Oil for frying
Instructions
- Heat some oil in a large pan or wok over medium heat. Add the beaten eggs and scramble them. Remove from the pan and set aside.
- In the same pan, add a little more oil and sauté the shallots, garlic, and chilies until fragrant.
- Add the diced chicken and cook until it's no longer pink. Then, add the mixed vegetables and cook until they are tender.
- Stir in the sweet soy sauce, soy sauce, shrimp paste, tamarind paste, sugar, and salt. Mix well.
- Add the cooked rice to the pan and stir-fry with the chicken and vegetable mixture until everything is well combined.
- Spread the rice evenly in the pan and let it cook without stirring for a few minutes to create a crispy bottom layer.
- Once the bottom layer is crispy, flip the rice over and let it cook for a few more minutes to crisp up the other side.
- Finally, add the scrambled eggs back into the pan and mix them with the crispy rice.
- Transfer the Nasi Goreng Jawa Krispi to a serving plate and garnish with some sliced cucumbers, tomatoes, and a sprinkle of fried shallots.
