  • 200g chicken breast, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • Oil for frying

Instructions

  1. Heat some oil in a large pan or wok over medium heat. Add the beaten eggs and scramble them. Remove from the pan and set aside.
  2. In the same pan, add a little more oil and sauté the shallots, garlic, and chilies until fragrant.
  3. Add the diced chicken and cook until it's no longer pink. Then, add the mixed vegetables and cook until they are tender.
  4. Stir in the sweet soy sauce, soy sauce, shrimp paste, tamarind paste, sugar, and salt. Mix well.
  5. Add the cooked rice to the pan and stir-fry with the chicken and vegetable mixture until everything is well combined.
  6. Spread the rice evenly in the pan and let it cook without stirring for a few minutes to create a crispy bottom layer.
  7. Once the bottom layer is crispy, flip the rice over and let it cook for a few more minutes to crisp up the other side.
  8. Finally, add the scrambled eggs back into the pan and mix them with the crispy rice.
  9. Transfer the Nasi Goreng Jawa Krispi to a serving plate and garnish with some sliced cucumbers, tomatoes, and a sprinkle of fried shallots.
