Ingredients

  • 3 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 red chilies, sliced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the minced garlic, chopped onion, and sliced red chilies. Stir-fry until fragrant.
  3. Push the ingredients to one side of the wok, pour the beaten eggs onto the empty side, and scramble until cooked.
  4. Add the mixed vegetables and stir-fry for a few minutes until they are tender-crisp.
  5. Stir in the cooked rice, soy sauce, and sweet soy sauce. Mix well to combine all the ingredients.
  6. Season with salt and pepper to taste. Continue stir-frying until everything is heated through.
  7. Transfer the fried rice to a serving dish and garnish with sliced cucumbers, tomatoes, and a sprinkle of fried shallots, if desired.
