Nasi Goreng Makassar (makassar-style Fried Rice)

Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 200g chicken breast, diced
  • 100g shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 green chilies, sliced
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 4 tablespoons vegetable oil

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 2 tablespoons of vegetable oil in the same wok.
  4. Sauté the garlic, onion, and green chilies until fragrant.
  5. Add the diced chicken and cook until no longer pink.
  6. Stir in the shrimp and cook until they turn pink and opaque.
  7. Add the cooked rice to the wok and stir-fry with the chicken and shrimp mixture.
  8. Season the rice with sweet soy sauce, soy sauce, shrimp paste, tamarind paste, sugar, and salt. Mix well.
  9. Add the scrambled eggs back into the wok and toss everything together until heated through.
  10. Remove from heat and serve the Nasi Goreng Makassar hot.
