Ingredients

  • 3 cups cooked jasmine rice, cooled
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 red chili, thinly sliced
  • 200g chicken breast, diced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon kecap manis (sweet soy sauce)
  • 1 teaspoon shrimp paste
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large frying pan over high heat.
  2. Add the garlic, onion, and red chili, and stir-fry for 2 minutes.
  3. Add the diced chicken and cook until it's no longer pink.
  4. Push the chicken to one side of the wok, then pour the beaten eggs onto the other side. Scramble the eggs until set, then mix with the chicken.
  5. Add the remaining vegetable oil, then add the cooked rice, soy sauce, kecap manis, and shrimp paste. Stir-fry for 3-4 minutes.
  6. Add the mixed vegetables and continue to stir-fry for another 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the Nasi Goreng hot and enjoy!
