Ingredients

  • 3 cups cooked white rice
  • 1 cup fresh pineapple, diced
  • 2 eggs, beaten
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • 1 teaspoon shrimp paste
  • 1/2 cup peas
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add onion, garlic, and red chili. Sauté until fragrant.
  3. Push the aromatics to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  4. Add the cooked rice to the pan. Stir-fry for 2-3 minutes.
  5. Stir in soy sauce, ketchup, shrimp paste, peas, and diced pineapple. Cook for another 2-3 minutes.
  6. Season with salt and pepper, then add chopped green onions. Stir well to combine.
  7. Transfer the Nasi Goreng Nanas to a serving dish and garnish with additional green onions or sliced red chili, if desired.
