Nasi Goreng (surinamese Nasi Goreng)

Ingredients

  • 4 cups cooked white rice, preferably day-old
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, diced
  • 1 cup green beans, chopped
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon shrimp paste (trassi)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of oil in the same wok. Add the chopped onion and minced garlic, and sauté until fragrant.
  4. Add the diced bell pepper, carrots, and green beans. Stir-fry for a few minutes until the vegetables are slightly tender.
  5. Push the vegetables to the side of the wok and add the cooked rice to the center. Stir-fry the rice for a few minutes to heat it through.
  6. Return the scrambled eggs to the wok and mix with the rice and vegetables.
  7. Add the soy sauce, sweet soy sauce, shrimp paste, ground coriander, ground cumin, and chili powder. Stir well to combine all the ingredients.
  8. Season with salt and pepper to taste. Continue to stir-fry for a few more minutes until everything is heated through and well combined.
  9. Remove from heat and serve the Nasi Goreng hot. Enjoy!
