Nasi Grombyang Love

Ingredients

  • 2 cups jasmine rice
  • 4 cups water
  • 1 lemongrass stalk, bruised
  • 4 kaffir lime leaves
  • 200g chicken, diced
  • 200g tempeh, sliced
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 2 tablespoons sweet soy sauce
  • 1 tablespoon tamarind paste
  • Salt to taste
  • Oil for frying

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a large pot, combine the rice, water, lemongrass, and kaffir lime leaves. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked.
  3. While the rice is cooking, heat oil in a pan and fry the shallots and garlic until fragrant.
  4. Add the chicken and tempeh to the pan and cook until they are golden brown.
  5. Stir in the sweet soy sauce, tamarind paste, and salt. Cook for another 5 minutes.
  6. Once the rice is cooked, fluff it with a fork and remove the lemongrass and kaffir lime leaves.
  7. Serve the rice with the chicken and tempeh mixture on top. Garnish with sliced red chilies.
