Nasi Jagung Magic

Ingredients

  • 2 cups of cooked rice
  • 1 cup of corn kernels
  • 1 cup of coconut milk
  • 1 stalk of lemongrass, bruised
  • 2 kaffir lime leaves

  • 1 teaspoon of sugar
  • 2 tablespoons of cooking oil

Instructions

  1. In a pot, heat the cooking oil over medium heat.
  2. Add the lemongrass and kaffir lime leaves, and sauté until fragrant.
  3. Add the corn kernels and cook for 3-4 minutes.
  4. Pour in the coconut milk, salt, and sugar. Stir well.
  5. Add the cooked rice and mix until well combined.
  6. Cover the pot and let the Nasi Jagung Magic simmer for 15-20 minutes, stirring occasionally.
  7. Once the liquid is absorbed and the rice is cooked, remove from heat.
  8. Discard the lemongrass and kaffir lime leaves before serving.
